Medicine On a Plate for Winter Cold

Food provides natural remedies in the cold winter. At the first sign of my cold, this Portuguese Fish Stew with Fresh Fennels, Onions, and Tomatoes was easy to make and quickly helped me ease my sore throat. And it was soothing and delicious! Along with other herbal tea drinks, I recovered from the cold quickly.

Portuguese Fish Stew with Fresh Fennels, Onions and Tomato

Nurturing properties:

Fennel contains anti-inflammatory oil and antimicrobial components which can relieve congestion and sore throat. Tomato, rich in vitamin C, strengthens your immune system. Hot soup keeps your body warm in the winter.

Ingredients:

-White Fish (Cod, Sea Bass, Groupers, or any white fish)

-Peeled Prawns

-Fresh Fennels

-Onions

-Round Tomatoes

-Red Bell Pepper

-Fresh Parsley

-Dried Thyme

-Paprika

-Olive Oil

Let's cook

-Cut fish into cubes, about 2cm

-Remove prawn intestines

-Roughly chop fresh fennel bulbs and onions into small pieces, about 0.5cm

-Cut bell pepper into about 1cm pieces

-Cut tomato into 2cm cubes

-Heat a medium stock pan, pour in olive oil

-When Olive oil reaches a low heat, add onions and fennels, and saute for about 3 minutes

-Add fresh chicken stock (or vegetable stock). I used water instead.

-Add salt (I only add a very small amount for healthy benefits)

-When the soup is boiled, add Fish, Prawns and tomatoes.

-When the soup is boiled, turn to low heat, and boil for about 10 minutes

-Add bell pepper for another 2 minutes

-Garnish with chopped fresh parsley before serving
